I’m Anston — the baker behind The Underground.

Baking has always been my way of connecting with people, a passion deeply rooted in my childhood days in Dubai, enriched by my Sri Lankan heritage, and a love for flavours that evoke cherished memories meant to be shared. In 2019, I had the whirlwind experience of participating in The Great Australian Bake Off, where I had the honour of baking my way into the Top 7, sharing my creations with all of Australia.

What started as a simple weekend hobby — crafting cupcakes and birthday cakes for friends gathered around our table — quickly blossomed into something far more significant. Today, The Underground is a beloved bakery in Sydney where custom cakes, cookies, brownies, and tarts are lovingly crafted with care, flavour, and heart.

The heart behind The Underground is Brad, my partner in life and business, along with our beautiful daughter, and the circle of friends who have cheered me on since my very first sponge cake. The Underground has grown into a sanctuary where stories are baked into every creation. These stories unfold in every celebration cake, every sweet treat, and every nostalgic bite we offer.

For me, baking transcends the mere act of creating food. It embodies the little moments: grand birthdays and intimate celebrations, quiet cups of tea (or coffee — the lifeline I thrive on), and the pure joy on someone’s face as they savour that first bite.

Every bake that leaves our Sydney kitchen is made to be shared — with care, nostalgia, and joy woven into each creation.
